Although I have really been out of my normal routine with my little self declared vacation, then some wicked morning sickness (...that lasted all day, every day), I am begining to feel better and would like to catch up on some of the things that we have been doing. This was the first year that we joined a CSA. A girlfriend of mine came across a smaller organic farm run by this great young couple and we dicided that we would split a share. In the begining, I was not all that impressed. My family goes through fruit like it is going out of style and the veggies were not exactly of the variety and quantity that I had heard about other CSA's having. I have to admitt, that with feeling kind of blah most of the time, I did not exactly have th adventurous spirit to try all of these different recipies with different veggies as I had imagined I would. We stuck it out though, and things are really comming together nicely. Most recently, we have had a ton of zucchini, so I looked up a recipie for zucchini bread (knowing that my kiddos would not eat it steamed or roasted).
This recipie came out really well, yielding 2 loaves of what has officially been renamed by my little ones as "cinnamon bread" because it is so sweet, it is like dessert.
3 cups all purpouse flour 3 Eggs
1 tsp. salt 1 cup veg oil
1 tsp. baking soda 2 1/4 cups sugar
1 tsp. baking powder 3 tsp. vanilla extract
3 tsp. cinnamon 2 cups grated zucchini
I mixed all of the dry ingredients, then all of the wet, finally adding the dry mixture to the wet gradually. At the end I floded in an optional 1 cup of chopped walnuts. Pour mix into 2 greased 8x4 pans and bake at 350' for 40-60 minutes. Cool for 20 minutes. They will freeze for about 3 weeks.
As I am begining to feel better, some of my ambition toward taking on preparing some of these random veggies that are comming my way is starting to return. I'll surely share anyhing else that I come up with, but in the mean time, have a wonderful weekend and enjoy the zucchini bread!

That looks good! I think I'm having sympathy morning sickness for you. That is quite literally the only explanation of my heightened sense of smell and queasiness as I NEVER get sick and I know that I am absolutely NOT pregnant! So, apparently reading your blog daily is stronger than the equivalent of being my sister and living nearby while pregnant. Um...good job? :)

Sometimes alot of heat can do it too? I'm pretty bummed on the sicki-ness since I am a huge bread/ cake fan and would really love to devour this bread! I'm starving and can't wait until I can manage to hold down more than an eggo waffle!
