I think that I mentioned that we joined a CSA for the first time this year. It has been a bit of a roller coaster ride and first, I was not all that thrilled with the share we were getting. As the season progressed, the amount and variety of veggies were received did improve, however, I was so morning sick {all day}, that I could not manage to make much of anything. Thankfully, that all changed this week! To put it in perspective, you know things had gotten pretty bad when my husband came home from work the other night and said "honey, you're making me dinner...that's such a turn on!" Cheap thrills, I tell you.
Some of what came our way this week was a bunch of corn and zucchini {yup, we baked more zucchini bread too}, carrots, and some china choi. After some investigation, I found that this is like bok choi {which I had heard of}, and asked a girlfriend of mine what she planned to do with her share of it. She informed me that stirfry was on her family's menu this week, and after some prying as to what exactly she did to the stir fry, I decided I'd give it a go too. It was delicious! This dish was incredibly healthy, I was able to use so many of different veggies I had in the house, and knowing this is one of my parent's favourite meals, I had them join us for dinner, as there was just so much of this yummy goodness!
Here are some tricks that my friend passed onto me that I credit for making this meal such a success. First, I cut the cicken in to small chunks {or use tofu} and marinated it in soy sauce over night. When cooking, I put the chicken in the wok to cook without the sauce and started the rice. As the chicken cooked, I added the veggies; first carrots and root veggies, and the chopped china choi and other veggies later. For a sauce, used soy sauce and the juice from a can of pinnapple. Apparently, adding a bit of citrus while cooking, helps the veggies to absorb the flavors better {I threw in the chunks of pinnaple at the end just to warm them}. My last additon was a container of chinese noodles, I loved the crunch that they added, but more than anything , I knew this would be a sure fire way to get my kiddos to eat this wonderfully nutritious meal...and they did! I hope some of these thoughts are helpful...I wonder what the CSA will have me making this week?
